An Unusual Cake Recipe Using Chocolate and Zucchini (Courgette)

This is a delicious and strange recipe for a cake, that the whole family will enjoy.

A Cake Recipe Using Chocolate and Zucchini

Ingredients:

1/2 C. to 1 C. choccie chips
3 zucchini, approximately 6" long, shredded (approx. 2 cps)
1 t. cinnamon
two half a cup cake flour
3 fresh eggs
0.5 Cup real butter
One t. vanilla flavouring
Half C. refined sugar
One Cup brown sugar
half a cup sunflower oil
0.5 Cup buttermilk
4 Tbs cocoa
One t. table salt
Two t. baking soda

Instructions:

In advance, preheat your oven to to 325 degrees F / 160 degrees C.

Grease a 9" x 13" cake pan and put to one side.

In mixing bowlcombine sugars, the oil and the butter.
Add eggs, the buttermilk and the vanilla and stir well until well mixed.

With a sifter or sieve, sift the cinnamon , flour, cocoa, baking soda and salt to make one.

Combine the two mixtures

Stir in courgette and stir well.

Transfer the whole mix into the cake tin and spinkle the choccie chips over the top.

Transfer to the pre-heated oven and cook for three quarters of an hour.

Allow it to cool a little, Let it stand on a wire rack until cool enough to serve..

During these challenging periods of economic difficulty, right now, more than ever, there are some very convincing arguments for cooking flavorful meals yourself as an alternative to eating out in a restaurant

Cooking at home can be transformed into a bit of quality time together, convince your offspring or your partner to assist and a restaurant quality meal we'll be ready in a surprisingly short time.
